Maple
Inspired by Seoul's Gangnam fine dining scene, Maple is Manila's most sophisticated Korean dining concept — a chef-driven tasting menu experience that goes far beyond BBQ. Chef Park Jun-seo trained in Seoul's Michelin-starred Korean restaurants before opening Maple as a culinary bridge between Korea and the Philippines.
The chef's menu draws on Korean fermentation traditions — ganjang (soy sauce), doenjang (bean paste), gochujang (chili paste) — and applies them with modern technique. A5 Wagyu is glazed in housemade ganjang. Kimchi aging schedules are tracked like fine wine. The banchan selection changes monthly.
Maple's private ondol rooms seat up to 8 guests with floor seating and full table service — an authentic Korean dining experience rarely found outside Korea.
