Trattoria Fiamma
The newest Italian addition to Salcedo Village's dining scene, Trattoria Fiamma is Chef Sofia Calabrese's personal tribute to the slow-food traditions of her native Calabria. The menu is deliberately unhurried — slow-braised short rib in red wine, hand-rolled cavatelli in nduja butter, and whole-roasted lapu-lapu in acqua pazza.
Fiamma emphasizes the natural wine movement — the cellar features exclusively organic and biodynamic Italian producers, with an emphasis on Calabrian, Sicilian, and Sardinian labels rarely seen in Manila.
Since opening in early 2026, Fiamma has become a Salcedo Village dining institution, drawing both Filipino food enthusiasts and the Italian expatriate community.
